A great steak to try when you process your side of beef is the Picanha steak. 

The Picanha steak is the sirloin cap and is probably one of the most flavorful cuts. It is the Brazilian steak of choice. 

The cut can be cooked as a whole roast and then sliced or you can slice the steaks and cook individually.
